Maple & Pecan Cookies

The maple and pecan cookies are quickly made weekend treats with a few ingredients: handfuls of pecans, rolled oats, maple syrup and peanut butter. I make these cookies with nutritious pecans, and sometimes add dark choc chips for weekend snacks.

·       Peanuts are as popular as they are healthy. They're an excellent plant-based source of protein and high in various vitamins, minerals, and plant compounds. They can be useful as a part of a weight loss diet and may reduce your risk of both heart disease and gallstones.

MAPLE & PECAN COOKIES

PB, V, DF, GF

Makes 15-18 cookies

1 cup (250 ml.) maple syrup

½ cup (125 g) live yogurt

3 tbsp (42 g) peanut butter

2 cups (240 g) white spelt flour or GF flour

1 cup (90 g) organic whole rolled oats

2 tbsp (30 g) flaxseed meal

1 tbsp (10 g) egg replacer

1 tsp (3 g) baking powder

½ tsp (2.5 g) salt

1 cup (100 g) pecans, broken by hand

extra: 1 cup (170 g) chocolate chips

Preheat the oven to 180’C. Add the wet ingredients to a large bowl and stir until combined. Add the dry ingredients and pecans, and mix to a batter. Use an ice cream scoop and scoop some mixture onto a lined baking tray and press the cookie gently with the tines of a fork, repeat for each cookie. Bake for about 15 minutes until golden. Remove from the oven and cool.
