Banana & Peanut Oaties

Many of my cookie recipes are inspired by childhood memories, like these banana oaties. My dad grew bananas on the far-north coast of NSW and being poor as church mice the only fruit we ate were bananas. My mum’s treats were always made with bananas, so it’s obvious these tasty morsels evoke early memories of taste and smell.

BANANA & PEANUT OATIES

Makes 15 cookies

3 cups (270 g) organic whole rolled oats

½ cup (125 g) peanut butter

3 ripe bananas, mashed to a puree

1 cup (180 g) 70% dark chocolate chips

OR 1 cup (140 g) nuts, chopped

¼ cup (30 g) hempseeds

Mix all the ingredients together until combined. Using an ice cream scoop, scoop the mixture onto a lined baking tray and mark each cookie with the tines of a fork. Bake in 180’C for 15-20 minutes.
