Haystacks
Are haystacks on repeat in your house? They’re a favourite for us. The chilli beans are heated oil free, while the plant-based sour cream is made in the blender on the hot soup cycle.

HAYSTACKS

Plant-based sour cream:
1 cup (140 g) raw cashews
1 cup (240 ml.) water
2 tbsp lemon juice
Place ingredients in the blender and blend on the hot soup cycle until thick. Pour into a serving glass jar.
Oil-free chilli beans:
1 onion, diced
1 garlic clove, finely sliced
2 tomatoes, chopped
400 g tin kidney beans
1 cup (166 g) tempeh, optional
½ tsp lemon juice
1 jalepeno, deseeded and finely chopped, optional
Sauce the onion in a little water for about 5 minutes until transparent. Add the rest of the ingredients and simmer for 10 minutes, stirring occasionally.
Chunky salsa:
1 cucumber
1 tomato
1 red onion
4 olives
sprigs parsley
Roughly dice cucumber, tomato, red onion, olives and parsley. Add to a bowl and mix.
Avocado mash:
2 avocados, chunky mash
1 tbsp red onion, finely diced
cherry toms, quartered
1 lime juiced
pinch of sea salt
Roughly stir.
