Apple & Turmeric Bircher
I’ve found a cafe at the Melbourne airport that sells a delicious bircher. Before my morning flights, I like to eat breakfast but last week I’d only eaten a mouthful or two when I realised it was time for my boarding call.
This homemade bircher is nutritious in plant foods with grated sweet Pink Lady apple, earthy turmeric and citrusy cinnamon spices with toasted crunchy nuts.

APPLE & TURMERIC BIRCHER

Bircher:
1 apple
½ cup (40 g) organic whole rolled oats
pinch of ground turmeric and cinnamon
2 tbsp (30 g) coconut yogurt
2 oranges, juice
Toppings:
berries
toasted almonds
edible flower petals, for a weekend brunch
Pre-heat the oven to 180’C and toast a handful of almonds for 8-10 minutes. Grate the apple into the bowl, layer the remaining ingredients on top. Add berries and toasted almonds and serve.
